What is Sous Vide?
Sous vide, a French cooking technique, where raw ingredients are usually placed in a plastic sealable bag, set in a precise temperature controlled circulating water bath, then set to cook for a longer than usual cooking time. With the benefit of cooking at a specific and consistent temperature, sous vide takes a lot of the guess work out of cooking and ensures that food will be cooked perfectly every time. Without overcooking the outside, or undercooking on the inside, this results in a tender and flavourful end-product all the time.
Why Sous Vide Cooking?
While this cooking technique does take a longer cooking time compared to traditional methods such as cooking over a stove top, it presents a few advantages. Sous vide allows you to control the cooking temperature so that you can get the most out of your food – imagine a piece of sous vide cooked steak that is tender and bursting with natural flavours because of the locked-in moisture. Sous vide cooked food allows you to get perfectly cooked, edge to edge, without losing volume from loss of moisture compared to traditional cooking.
